Tortilla Soup and Bloody noses

When you decide to have a baby, no one tells you just how accident prone they’re likely to be. Or maybe H is just the clumsiest child in the world.

This weekend, we decided to stay home and relax. We spent our time playing with dolls, having tea parties, watching movies and nearly breaking noses. Yep, you read that right. On Sunday, H decided it would be fun to be silly on the couch. This plan backfired on her. she fell off the couch and bounced her face right off the space heater. Yeah, it was 95 degrees and I had the space heater out, but that’s not the point. I was folding clothes in the laundry room and I hear H crying in pain. I come down the hall to hear my husband say “Ummm uh oh, lets hurry to the bathroom”. Then I see blood gushing from H’s nose. One fun fact about me, blood makes me nauseous and scares the crap out of me. While my husband is trying to get her nose to stop bleeding, I ask if we need to head to the hospital. Now that my husband realizes that the bleeding isn’t slowing down, he agrees that we should go. At this point, I’m running frantically through the house trying to round up the dogs. After making 4 trips up and down the stairs and get the dogs in their rooms (yes, they have rooms), I’m ready to go. Once I’m down stairs and practically dead from all that running, my husband says “oh it stopped”. I mean he could have said that during one of the times I was chasing the dogs up and down the stairs, or he could have just yelled up the stairs that we were good.

So, long story short, after a quick call to the nurse line from our insurance, we decided she didn’t need to head to the hospital. We treated with a cold compress, head elevation, and Motrin. No broken nose, thank goodness. By the end of the day, H was back to her normal crazy self.

Switching gears, have yall ever had Max & Erma’s? More specifically their chicken tortilla soup? If you haven’t you’re missing out! Lucky for you, I have a copycat recipe that is so close to the original that you don’t have to drive (or fly) to the restaurant. I’m from the South and there is not a Max & Erma in my home state (or the current state I live in now). It’s a tragedy really. My first experience was in the Detroit airport during a 2 and a half layover. My husband told me I had to order the chicken tortilla soup, and yall it was heaven in my mouth!

Ingredients

  • 2 cans cream of mushroom soup
  • 2 cans cream of chicken soup
  • 2 cans cream of celery soup
  • 2 cans chicken broth
  • 2 cans cheddar cheese soup
  • 1 can diced tomatoes
  • 12ounces green chilies
  • 1 cup salsa
  • 1 medium onion (chopped)
  • 4 garlic cloves, minced
  • 1 teaspoon chili powder (to taste)
  • salt and pepper
  • 4 chicken breasts
  • tortilla strips (I use the bagged kind that you can buy and use as a salad topping Santa Fe flavor)

Directions

  • In a large pot, boil the chicken breasts until they are done
  • remove chicken & shred
  • add the cans of soup into a large pot stirring until well blended
  • Add the remainder of the ingredients to pot and allow to simmer for roughly an hour
  • add the shredded chicken and simmer for 30 minutes
  • once the soup is in bowls, top with tortilla strips
